Ingredients

  • 1 ¼ cups dried Great Northern beans
  • ½ cup diced ham
  • 2 ½ cups chicken stock
  • 1 ½ cups water
  • ¼ onion diced
  • 1 carrot diced
  • 1 celery stalk diced
  • 1 garlic clove minced
  • ¾ teaspoon black pepper
  • 1 10 ounce can RO*TEL diced tomatoes any variety
  • 1 ½ teaspoons olive oil

Instructions

  • Secure the lid and set the Instant Pot to Pressure Cook (High) for 60 minutes.
  • When cooking is complete, allow the pressure to release naturally for 10 minutes. Then carefully release any remaining pressure using the manufacturer's instructions, or let the pressure release naturally completely.
  • Once the pressure has fully released, open the lid, stir, and serve.
