Ingredients

Strawberries

  • 14 fresh strawberries
  • 2 teaspoons granulated sugar

Homemade Whipped Cream

  • ½ cup cold heavy whipping cream
  • 1 tablespoon powdered sugar
  • ¼ teaspoon vanilla extract

Store-bought sponge cake dessert shells

Instructions

  • Prepare the strawberries: Wash and hull the strawberries, then slice them into bite-sized pieces. Place in a small bowl, sprinkle with granulated sugar, and gently stir. Let stand at room temperature for 15 to 20 minutes to release their natural juices. This process is called macerating.
  • Make the whipped cream: Combine cold heavy whipping cream, powdered sugar, and vanilla extract in a mixing bowl. Using an electric hand mixer or a KitchenAid stand mixer fitted with the wire whisk attachment, beat on medium-high speed until soft to medium peaks form.
  • Assemble the shortcakes: Place one dessert shell on each serving plate. Divide the strawberries evenly between the shells, adding a little strawberry syrup if desired. Top with homemade whipped cream and garnish with additional strawberry slices. Serve immediately.

Notes

- **Whipped cream:** Both an electric hand mixer and a KitchenAid stand mixer work well for whipping this small batch of cream.
- **Extra whipped cream:** Double the whipped cream ingredients if you'd like extra. The recipe as written makes approximately 1 cup.
- **Strawberries:** Adjust the sugar depending on how sweet your berries are.
- **Make ahead:** Prepare the strawberries and whipped cream separately and refrigerate. Assemble just before serving to prevent soggy dessert shells.
- **Shortcut:** Substitute prepared whipped topping for homemade whipped cream if desired.
